Waterkloof has always been at the forefront of innovation, which has led to numerous awards and widespread praise from critics, and this ‘Circumstance Cape Coral’ could be considered South Africa’s first iconic rosé.
The Waterkloof Estate vineyards are located high above False Bay on the exposed upper slopes of the famed Schaapenberg Mountain, at the southern limit of the Stellenbosch region. Facing directly towards the Atlantic Ocean, the strong maritime influence, unique soils and steep aspect combine to create a very special terroir. These conditions lead to the production of wines with restraint, elegance and a strong mineral character.
The winemaking team follow natural methods with minimal intervention, including the use of open-top fermenters and wild yeast fermentation to produce wines which emphasise the terroir character. Grapes are hand-harvested and then gently whole-bunch pressed. The juice is drained with no further maceration, before naturally occurring yeast ferments until dry. The resulting wine is left on the lees for around four weeks to add further complexity.
This is a plush Cape Rosé with real class. Beautifully dry and crisp, this is an elegant wine with clean minerality and a vibrant herbal character. There are delicate fresh fruit flavours on the palate with hints of dried apricot, fig, and a stony minerality. Perfect as an aperitif or excellent as a match for seafood.
